12/14-12/16. Tarpon Springs, Fl.

We spent 3 nights in this cute little town that feels like it came right off  a small greek island.  Tarpon Springs has the highest percentage of Greek Americans of any city in the US- Wikipedia.  Back in the late 1800’s the sponge business was founded.  The story goes that the greeks were brought in to harvest the sponges.  Greeks had been diving and holding their breath for years and were better adapted to the sponge business than the local folks.  More and more greeks came to the area as the sponge business grew.  This stop was a gastronomic delight.  We enjoyed some wonderful greek food.  I think our favorite dish was the greek salad made in the traditional sponge diver fashion- with potato salad.  We were told that back in the day, the divers needed more carbs that a regular greek salad wold give them.  So a mound of potato salad was scooped onto the plate before the rest of the salad was heaped on.  Portions were amazing. Tim and I got 4 meals out of one greek salad.  Yum.  The town is also very dog friendly.  Most restaurants had outdoor seating and welcomed dogs.  Maggie even joined us for a few happy hours.

Maggie sits in front of a sponge boat. Behind her is a bag of harvested sponges.
